Tasting Note
Lifted aromas of wild strawberry, violets, dried orange and sandalwood. Silky, glossy palate with cinnamon and faint woodsmoke, fine sandy tannins and a long, elegant finish.

Roast duck with five-spice & plum glaze; chargrilled lamb cutlets with rosemary & garlic; porcini & truffle risotto; slow-roasted Mediterranean vegetables; aged Manchego or Pecorino; Korean BBQ (bulgogi) or char siu pork; hearty braised noodle dishes.

Production Method
Hand-picked; wild fermentation in concrete pyramids with ~30–33% whole bunches layered with destemmed fruit. Gentle, slow extraction; matured ~10 months in seasoned French oak and concrete; bottled unfined and unfiltered.

Single-vineyard fruit from Sue Trott’s Trott Vineyard (planted 1952), dry‑grown bush vines on deep Maslin sands. Produced by Thistledown (Giles Cooke & Fergal Tynan MW), focusing on old‑vine Grenache.
