Tasting Note
Intensely perfumed black and blue fruits, candied licorice, violets and exotic spice with olive and smoky-bacon savory notes. Concentrated blackberry/cassis, vibrant mineral lift, juicy acidity, polished yet firm tannins and a long saline finish.
Food Pairing
Western: roast lamb, braised beef, venison, cassoulet, grilled ribeye, aged hard cheeses. Asian: Peking duck, Korean BBQ (bulgogi, galbi), char siu, Sichuan-style beef, grilled miso aubergine.
Production Method
Minimal-intervention: 100% Syrah, gentle punch-downs (no pumping-over), slow ferment, gravity transfer; matured 18–24 months in used barrels and foudres, little/no new oak and low SO2 at blending.
