Tasting Note
Fresh melon, grapefruit and tropical notes (pineapple, passionfruit) with zesty citrus and mineral edge; crisp, medium-bodied and well balanced with a clean, invigorating finish.

Food Pairing
Western: oysters, scallops, ceviche, goat cheese, green salads, grilled chicken. Asian: sushi and sashimi, Vietnamese spring rolls, light Thai and Vietnamese seafood dishes.

Production Method
Bunches de-stemmed, crushed and pressed; juice settled and cold-fermented in stainless steel (≈14°C) with Vin7 yeast; unwooded, short tank maturation before bottling.

Family-owned Thelema Mountain Vineyards, founded 1983 by Gyles Webb. High-altitude, south-facing vineyards on Simonsberg producing expressive, cool-climate whites and acclaimed reds.
