Tasting Note
Savoury, brambly Syrah with wild blackberry, black cherry and liquorice, lifted by violets, alpine herbs and pepper. Smoky cedar and fennel underpin a concentrated, silky palate and a long, savory finish.

Food Pairing
Western: grilled or peppered beef, roast lamb, venison, aged cheddar. Asian: Korean BBQ (bulgogi), Sichuan pepper beef, char siu, Malaysian satay, rich braised short ribs.

Production Method
Wild-yeast fermentation in three batches (some destemmed, ~60% whole-bunch), matured ~11–12 months in French puncheons/barriques (≈20% new oak), blended, tank-aged, bottled unfined and unfiltered.
