Tasting Note

Dense, dark-fruited: blackberry, plum and cassis with savory tobacco, dried sage and cured‑meat notes; powdery, gripping tannins, broad texture and a long, savory finish.

Western: well-marbled Wagyu or ribeye, roast lamb, beef stews, aged cheddar. Asian: Korean BBQ (galbi), char siu (Cantonese BBQ pork), Peking duck, Sichuan pepper beef, rich mushroom hot pot.


Production Method

Fermented from young-vine lots vinified separately, aged ~2–3 years in French and Austrian oak (new and neutral/stainless variations), blended then further aged prior to release.
