Tasting Note
Dense black-fruit core of blackberry, black cherry and plum with cedar, pencil shavings, vanilla and dried herbs. Velvety yet structured with firm, grippy tannins and a long, savory finish.

Food Pairing
Grilled ribeye or Wagyu steak, roast lamb, BBQ spare ribs; Asian: beef in oyster sauce, Korean BBQ (bulgogi), braised short ribs with soy/hoisin; aged Gouda or sharp cheddar; mushroom risotto.

Production Method
Lots vinified separately, blended after evaluation; aged ~3 years in a mix of new and neutral French oak and Austrian casks, plus ~18 months bottle aging before release.

Vineyard Info
Project by Will Harlan using younger-vine blocks from Harlan Estate, BOND and Promontory. Small-production label begun 2008; showcases fruit from hillside Napa sites.
