Tasting Note
Fresh red berries (raspberry, red currant), guava and citrus with crunchy apple notes, bright minerality and a crisp, dry finish.

Western: grilled salmon, roast chicken, mixed green salads, charcuterie and goat cheese. Asian: sushi/sashimi, Vietnamese spring rolls, spicy Thai or Szechuan dishes, Korean BBQ, light Chinese stir-fries.
Production Method
Machine-harvested in morning mist; pressed without de-stemming and clarified by flotation; cool commercial-yeast fermentation to dryness; no malolactic fermentation; short tank settlement and light fining.
