Tasting Note
Deep golden skin-contact white: flinty gunpowder, dried lemon, honeysuckle and yellow fruit. Medium-bodied with fine skin tannins, bright acidity and a saline, mineral finish.
Food Pairing
Mediterranean fish (monkfish, grilled tuna), seafood tapas, roasted chicken, mushroom risotto; Asian: sushi/ sashimi, grilled prawns with chili, Thai fish curry, lightly spiced Korean seafood pancakes.
Production Method
Whole-cluster, native-yeast fermentation with short skin maceration (approx. 3–6 days). Aged ~6 months in stainless-steel/concrete; no oak. Bottled April 2024.
