Tasting Note
Fresh Mediterranean white with citrus peel, orange blossom, beeswax, savory mountain herbs and saline-umami; bright, searing acidity, creamy mid-palate and long, savory finish.

Western: grilled/roasted white fish, shellfish (oysters, scallops), paella, roasted chicken, mushroom risotto, tapas. Asian: sushi/sashimi, tempura, grilled prawns, miso-glazed fish, Thai seafood salad.

Production Method
Hand-harvested, whole-cluster pressing; wild-yeast fermentation and six months ageing in 5000L concrete vats; no new oak, minimal intervention.
