Tasting Note
Concentrated yet refined: sour and black cherry, crushed slate, fennel, rosemary, wild herbs, cocoa and delicate tar notes. Fresh acidity, fine energetic tannins and a long mineral finish.
Food Pairing
Western: grilled lamb, roasted rabbit, cured meats, tomato-based stews, aged Manchego. Asian: Korean BBQ (bulgogi), char siu or lacquered pork, miso-glazed eggplant, spicy Sichuan lamb.
Production Method
Whole-cluster fermentation with indigenous yeasts; matured ~16 months in Stockinger foudres and concrete tanks (partially in 3,500L Stockinger foudre for 2019).

Terroir al Límit (Dominik Huber & Tatjana Peceric). Old Carignan vines (c.60–90 years) on schist/licorella slopes near Torroja; low yields and small production (~4,000 bottles).
