Tasting Note
Dark brooding aromas of raspberry coulis, Morello cherry, kirsch, blackberry and plum with garrigue notes of juniper, rosemary and fennel. Palate is rich and opulent with cassis, dark chocolate and plush Grenache framed by fresher acidity and firm Carignan tannins.
Food Pairing
Roast lamb, duck, braised beef, game, charcuterie, aged cheeses; Asian pairings: Korean BBQ (bulgogi), char siu, Peking duck, braised pork belly, spicy Sichuan beef.
Production Method
Hand-harvested old-vine fruit (80% Grenache, 20% century-old Carignan). Native-yeast fermentation, unoaked vinification and short maturation in inert vessels; no oak ageing.
Vineyard Info
Terres Fidèles, led by Fergal Tynan MW, produces small-batch, low-intervention wines from old vines in the Roussillon, working with local growers (e.g., Julien Montagne) to showcase site expression.
