Tasting Note
Light to medium-bodied Pinot Noir: red cherry, raspberry, dark cherry/cassis, floral violet, subtle spice and earth; fresh acidity, gentle silky tannins and a moderate finish.

Food Pairing
Western: roasted lamb, duck breast, roast chicken, mushroom risotto, Camembert/Brie. Asian: Peking duck, char siu, teriyaki salmon, grilled shiitake dishes, pork-belly ramen.

Production Method
Hand-harvested grapes; native-yeast fermentation with significant whole-cluster (~60% on some cuvées), ~10 months in older oak; low-intervention/low-sulfite or zero-sulfur bottlings for some cuvées.
