Tasting Note
Translucent ruby Sangiovese: rose and red berries (raspberry, amarena), black cherry, blackberry, star anise and gentle spice. Fresh acidity, silky tannins and a mentholated, medium-length finish.

Western: pasta Bolognese/ragù, mushroom risotto, roasted lamb, grilled beef, aged Pecorino/Parmigiano, charcuterie. Asian: grilled tuna or mackerel, teriyaki pork/chicken, Korean BBQ (bulgogi), char siu, mushroom ramen, Sichuan-spiced eggplant.

Production Method
Hand-harvested; spontaneous fermentation with indigenous yeasts, ~20–30 days maceration on skins; aged ~12 months on fine lees in cement and some French oak/tonneaux, further bottle aging.
