Tasting Note
Deep mahogany with olive rim. Opulent nose of wild honey, treacle, butterscotch, black pepper, cedar and mint. Palate rich with molasses, dried figs, sultanas and apricot confit; bright, fresh acidity and a clean, long finish.
Food Pairing
Western: crème brûlée, almond tart, dried figs, walnut/blue cheese platters, dark chocolate desserts. Asian: mooncakes or sesame sweets, red-braised (hong shao) pork, sticky rice desserts, miso-honey glazed dishes.
Production Method
Partially fermented red wine fortified with grape spirit and matured in seasoned oak casks for ~50 years in Taylor’s lodges, producing a wood-aged Single Harvest (Colheita) tawny.
