Tasting Note
Ruby red; aromas of cherry, blackberry and red currant with tobacco, vanilla and light spice. Full-bodied, persistent, smooth tannins and a warm, fruity finish.

Food Pairing
Western: roast lamb, braised beef, grilled sausages, aged Pecorino and Parmigiano. Asian: Korean BBQ, char siu, spicy Sichuan beef, miso-glazed eggplant, teriyaki dishes.

Production Method
Fermented in stainless steel at 25–28°C with ~12 days skin contact; full malolactic fermentation; aged ~12 months in 225L French oak barriques (20% new, 80% older).
