Tasting Note
Golden straw with exotic fruit (mango, pineapple, banana), vanilla/cedar and light brioche; fresh saline minerality, rich and juicy palate with bright acidity and a long spicy finish.

Food Pairing
Western: roast chicken, grilled/poached salmon, mushroom risotto, cream pasta, soft cheeses. Asian: miso‑glazed cod, seared tuna sashimi, tempura, milder Thai curries, sushi with richer toppings.

Production Method
Fermented and aged in 350L French oak (Allier/Tronçais); ~70% new barrels; 8 months aging; malolactic fermentation not carried out.
