Tasting Note
Blackberry, black cherry and cassis with cedar, tobacco and dark chocolate. Firm ripe tannins, fresh acidity and a structured, long finish.

Western: grilled ribeye, roast lamb, braised short ribs, aged pecorino, mushroom pasta. Asian: Korean BBQ (bulgogi), Cantonese char siu, Sichuan beef, Indonesian rendang, Japanese wagyu yakiniku.

Production Method
Hand-harvested; fermented in stainless steel at 20–28°C with ~20 days maceration; full malolactic fermentation; aged 18 months in new 225L French oak (Allier & Tronçais), then bottle-aged.
