Tasting Note

Concentrated dark blackberry, elderberry and cassis with praline, mocha and savory herb notes. Chocolaty mid‑palate, firm grainy tannins, fresh acidity and a long, tight cedar‑infused finish.


Food Pairing

Western: roast lamb, grilled ribeye, braised short ribs, aged cheddar. Asian: Korean BBQ, Cantonese char siu, spicy Sichuan beef, Malaysian satay.


Production Method

Hand‑picked, de‑stemmed, open ferment with gentle extraction, basket‑pressed; matured in new and seasoned French oak and metissage 300L barrels.
