Awards/Ratings
Retail and tasting notes praise concentration and tannin quality; other Ambervale vintages have received high critic scores
Tasting Note
Ripe dark berries and blackcurrant with tar and clove notes, a saline twist to blackberry, fine velvety tannins, full-bodied and concentrated with a long savory finish.
Food Pairing
Western: grilled ribeye/steak, roast lamb, aged cheddar. Asian: Korean BBQ (bulgogi), char siu/roast pork, Sichuan-style beef, rich mushroom and soy-braised dishes.
Production Method
Dry-grown, hand-harvested fruit; de-stemmed, open ferment with gentle extraction, basket-pressed, then aged ~18–24 months in French oak. Producer uses biodynamic-influenced viticulture practices.
