Tasting Note

Fresh, lively aroma of cantaloupe, green apple and rice. Bright acidity with soft umami, medium body and a clean, slightly creamy finish. Refreshing and food-friendly.

Sashimi, sushi, tempura, grilled white fish, yakitori, miso-glazed dishes; Western: roasted chicken, creamy cheeses, seafood pasta, charcuterie; spicy Asian dishes like Thai or Sichuan to balance acidity.


Production Method

Junmai (no added alcohol), unpasteurized (nama). Rice milled to 65% (Yamada Nishiki) and traditionally pressed using the brewery's haneki/hanegi method.
