Tasting Note
Black cherry, cranberry and bramble with violet, pencil-shavings and savory black tea; silky texture, bright acidity, fine tannins and a long mineral-tinged finish.

Food Pairing
Western: roasted duck, grilled ribeye, wild mushroom risotto, pork tenderloin. Asian: Peking duck, miso-glazed salmon/black cod, wagyu/kalbi (Korean BBQ), shiitake mushroom stir-fry.

Production Method
Hand-harvested; destemmed and fermented in small open-top bins; aged 15–16 months in French oak (majority new); bottled without fining or filtration.
