Tasting Note
Dark red. Aromas of boysenberry, currant, plum, blueberry, ripe cherry pie, orange marmalade and flint. Flavors mirror the nose with touches of grapefruit, brisk acidity and fine-grain tannins, finishing intricate, complex and youthful.
Food Pairing
Western: roast duck, mushroom risotto, grilled salmon, pork tenderloin with cherry sauce. Asian: Peking duck, teriyaki salmon, beef bulgogi, shiitake and soy stir-fry, miso-glazed aubergine.
Production Method
100% destemmed Pinot Noir; fermented in stainless steel; aged ~18 months in 100% French oak (≈67% new); small-batch barrel maturation.
