Tasting Note
Bright cherry, raspberry and black-fruit core with orange zest, pomegranate and floral (violet/rose) notes. Savory herbs, cedar and light tobacco; silky tannins, lively acidity and a mineral-tinged, medium-long finish.

Western: roasted duck, coq au vin, mushroom risotto, grilled salmon, charcuterie and soft cheeses. Asian: miso‑glazed salmon, hoisin duck breast, teriyaki chicken, mushroom hot pot, pork bulgogi (Korean BBQ).

Estate-grown fruit hand-harvested at night; ~86% destemmed/14% whole-cluster; native-yeast open-top fermentation; aged ~14 months in ~32% new French oak; bottled unfined/unfiltered.
