Tasting Note
Bright raspberry and Rainier cherry with clove, sandalwood and subtle forest-floor notes; medium-bodied, silky texture, vibrant acidity, gentle tannins and a long, savory finish.

Western: roast duck, grilled salmon, mushroom risotto, pork tenderloin, roasted chicken. Asian: miso-glazed salmon, char siu, teriyaki chicken, mushroom ramen, grilled shiitake bao.

Production Method
Estate-grown, sustainably farmed; hand-harvested, largely destemmed with a small percentage whole-cluster, open-top fermentation, aged ~14 months in French oak (≈30% new).
