Tasting Note
Bright cherry, raspberry and cranberry with pomegranate and orange-peel accents; savory herb, forest-floor and baking-spice notes. Medium-bodied with fresh acidity, supple tannins and a long, savory finish with subtle vanilla from French oak.

Food Pairing
Western: roast duck, pan-seared salmon, mushroom risotto, pork tenderloin, grilled flank steak. Asian: miso-glazed black cod, teriyaki salmon, duck pancakes, char siu, shiitake ramen.

Production Method
Hand-harvested estate fruit; ~85% destemmed/15% whole-cluster; native-yeast fermentation in small open-top bins; aged 14–15 months in ~30% new French oak; bottled unfined and unfiltered.
