Tasting Note
Bracing maritime smoke and sea spray with oyster-shell minerality, green apple and pear, vanilla cream, cracked black pepper and warming saline. Long, peppery, smoky finish with a menthol/Sichuan-pepper cooling edge.

Food Pairing
Western: smoked salmon, grilled lamb chops, aged cheddar or blue cheese, dark chocolate. Asian: fresh oysters, grilled mackerel, Sichuan-style dishes, Korean BBQ, char siu (barbecue pork).

Production Method
Matured in refill and ex-bourbon American oak, finished in stone-spun and lightly re-toasted American oak casks. Bottled at natural cask (cask strength), uncoloured and non-chill filtered.

Talisker Distillery, founded 1830 on the Isle of Skye; famed for maritime, peppery single malts. Now part of Diageo and regularly featured in the annual Diageo Special Releases.
