Tasting Note
Rich nose of dried plums, toffee and coastal smoke. Palate: sweet dried fruit, caramel, warming pepper and maritime salinity. Finish long, smoky with a chilli-tinge and oak spice.

Western: dark chocolate, blue cheese, smoked salmon, oysters, roasted/charred lamb, grilled steak. Asian: saba shioyaki (grilled mackerel), yakitori, char siu, Korean BBQ, Szechuan pork or spicy noodle dishes—pairs well with smoky/salty and richly spiced foods.
Production Method
Peated single malt (~18–22 ppm) distilled in copper pot stills, matured 18 years in a mix of ex‑bourbon American oak and ex‑sherry European oak casks, vatted and bottled at 45.8% ABV; typically chill‑filtered and may contain caramel colouring (E150a).
