Tasting Note
Concentrated blackcurrant, blackberry and plum with cedar, pencil lead, tobacco and crushed gravel; subtle mint and cocoa. Powdery, silky tannins, bright backbone of acidity and a long, savory, mineral finish.
Food Pairing
Roast beef, ribeye, lamb, game (venison), mushroom risotto, aged hard cheeses; Peking duck, char siu, Korean BBQ (galbi), braised beef short ribs, Sichuan-style beef stir-fry.
Production Method
Hand-harvested and sorted; fermentation in wooden vats; blended and aged ~15 months in French oak barrels (≈60% new). Bottled May 2021.
