Tasting Note

Concentrated cassis and blackberry with tobacco, cedar, violet and dark chocolate. Medium–full body, polished ripe tannins, mineral lift and a long savory finish.

Western: roast lamb, ribeye steak, beef Wellington, venison, aged hard cheeses. Asian: Korean BBQ (galbi), Japanese wagyu or beef tataki, Peking/roast duck with hoisin, Sichuan-style beef.


Production Method

Hand-harvested, double-sorted (manual + optical); fermented in wooden vats; aged 16 months in French oak (≈60% new).
