Tasting Note
Mature Bordeaux with blackcurrant, plum, cedar, tobacco and subtle cedar-spice. Medium-full body, savory earth and leather tertiary notes, powdery but integrated tannins and a slightly austere, savory finish.
Food Pairing
Roast ribeye, lamb chops, beef bourguignon, charcuterie, aged Comté; Asian: Peking duck, Korean BBQ short ribs, hoisin-glazed pork, mushroom stir-fry or soy-braised beef.
Production Method
Classic Left-Bank vinification: destemmed grapes, stainless/temperature-controlled fermentation, extended maceration and élevage in French oak barriques (approx. 12–18 months, ~1/3 new oak).
