Tasting Note

Concentrated black and red cherry, blackberry, dried herb and allspice with cedar/oak, roasted walnut and subtle truffle notes. Fine, loose-knit tannins, fresh acidity and a long, layered finish.


Food Pairing

Western: grilled lamb chops, braised short ribs, mushroom risotto, aged cheddar. Asian: Korean BBQ (bulgogi), char siu/roast pork, Sichuan pepper beef, teriyaki duck.


Production Method

Fruit from ungrafted 1860 vines, fermented traditionally (open vats), then matured ~18 months in selected French oak. Small-batch, limited release from half-acre single-vineyard parcels.
