Tasting Note
Ripe black cherry, bilberry and raspberry with floral, smoked-game and licorice notes; menthol/wood present. Medium-bodied, grainy tannins, mineral undercurrent and a serious, ageworthy finish.

Western: roast duck, coq au vin, beef bourguignon, mushroom risotto. Asian: Peking duck, char siu, miso-glazed salmon, shiitake & bok choy stir-fry.
Production Method
Sustainably farmed (non-certified organic) from century-old vines. 2022 ferment used ~60% whole clusters and was matured 14–18 months in oak (approx. 50% new). Minimal intervention focused on ageability.
