Tasting Note

Ripe black cherry and dark berries with violet, spice and a subtle sauvage note; discreet oak. Medium-plus, focused with lively acidity, fine-grained tannins and a firm, long finish — built for ageing.


Food Pairing

Western: Beef bourguignon, roast duck, mushroom risotto, charcuterie, aged cheeses. Asian: Peking duck, char siu, soy-glazed salmon, braised beef short ribs, mushroom stir-fry.


Production Method

Old-vine Pinot Noir; partial whole-cluster fermentation (~50–60%) in open wooden vats, circa 50% malolactic, matured in French oak (significant portion new), bottled unfined and unfiltered.

Domaine Sylvie Esmonin (7–8 ha) based in Gevrey‑Chambertin; biodynamic/organic practices since the 1990s; owns 1.7 ha Clos Saint‑Jacques and works mainly old-vine Pinot Noir.
