Tasting Note
Perfumed red and black cherry, raspberry and violet with earthy, saline and subtle spice notes. Medium-bodied, bright acidity, fine supple tannins and a concentrated, lingering finish.

Food Pairing
Western: roast duck, beef bourguignon, lamb shoulder, mushroom risotto. Asian: Peking duck, char siu pork, miso-glazed fish, Korean BBQ (bulgogi).

Production Method
Hand-harvested Pinot Noir; ~70% destemmed, ~30% whole-cluster; fermentation in open vats, finished and aged in barrels (≈30% new); unfined/unfiltered.
