Tasting Note
Fresh red and black cherry, raspberry and subtle blackberry with earthy mushroom, spice and minerality. Vibrant acidity, light tannins and a savory, slightly austere finish; medium-light body and lingering village-level complexity.
Food Pairing
Roast chicken, duck confit, mushroom risotto, beef bourguignon; Asian: miso-glazed salmon, teriyaki duck, char siu pork, mushroom stir-fry or miso-braised cabbage.
Production Method
Vines farmed organically/biodynamically. Partial whole-cluster (up to ~20%) fermentation in open wood vats; mostly destemmed. Aged in barrels (majority used oak; small % new). Minimal intervention, often unfined/unfiltered.

Small family domaine near Gevrey-Chambertin (c. 7–8 ha) run by Sylvie Esmonin since the 1990s. Known for old vines, Clos Saint-Jacques holdings, organic/biodynamic practices and traditional Burgundian winemaking.
