Tasting Note

Bright cherry and raspberry with rose petal, flinty minerality and light pepper from whole-cluster; earthy umami and black-olive notes. Vibrant acidity, granular tannins, medium-bodied with a long, saline finish.

Production Method

Organic/biodynamic viticulture; hand-harvested. Indigenous yeast fermentation with ~30% whole-cluster; aged 12–18 months in used French oak (≈15% new). Minimal sulfur at bottling; low-intervention winemaking.
