Tasting Note

Ripe stone fruit, lemon zest, hazelnut and brioche with salted butter and mineral undertones. Creamy mid-palate, bright acidity and a long, nutty finish.

Western: lobster with beurre blanc, roast chicken with cream and morels, seared scallops, mushroom risotto. Asian: miso-glazed black cod, prawn tempura, mild coconut-based Thai curry, sushi (rich white-fleshed fish).


Production Method

Hand-harvested, fermented with indigenous yeasts in mainly neutral French oak, aged on the fine lees 12–18 months with minimal bâtonnage to preserve freshness.
