Tasting Note
Citrus zest, green apple and pear with white flowers and flinty/mineral notes; subtle vanilla, hazelnut and light toast from oak, faint buttery texture and a long, fresh mineral finish.
Food Pairing
Roast poultry, mushroom risotto, grilled salmon, oysters and soft cheeses; Asian pairings: sushi/sashimi, tempura, miso-glazed fish, lightly spiced Thai or Vietnamese dishes.
Production Method
Hand-harvested; minimal-intervention vinification — cold stainless fermentation then finished in French oak (228L barriques and 600L demi-muids) and aged on lees for months with light/no bâtonnage.
