Tasting Note
Redcurrant and Morello cherry with forest berry, spice, soil and smoky mineral notes. Medium-bodied and mouthfilling with dusty, firm tannins, bright acidity and a long, saline, tart-cherry finish.
Food Pairing
Western: roast duck, duck confit, coq au vin, mushroom risotto, beef bourguignon. Asian: Peking duck, char siu, teriyaki salmon, miso aubergine, soba with mushrooms.
Production Method
Hand-harvested, fully destemmed grapes, cold maceration, indigenous-yeast fermentation in concrete vats (12–22 days), aged 18–20 months in French oak (≈50% new for village cuvée).
