Tasting Note
Perfumed red and black cherry, raspberry and blueberry with rose petal, woodland spice and subtle toasted oak. Medium-to-full body, fresh acidity, focused minerality and a long, subtly grippy finish.
Food Pairing
Roast duck, beef carpaccio, mushroom risotto, aged Comté; Asian: Peking duck, char siu pork, mushroom hot pot, soy-glazed salmon.
Production Method
Hand-harvested, fully destemmed after sorting; cold soak then native-yeast fermentation, late malolactic; aged ~18 months in French oak with significant (but reduced) new oak for premier cru; little/no fining or filtration.
