Tasting Note
Perfumed red-fruit core of red currant, wild cherry and bramble with tobacco, earth and subtle smoked-meat notes. Medium-bodied, silky texture, moderate tannins and an enduring, slightly rustic finish balanced by fresh acidity.
Food Pairing
Roast duck, beef bourguignon, lamb chops, charcuterie, Epoisses or Camembert; Asian: Peking duck, char siu, miso-glazed aubergine, mushroom ramen, Korean bulgogi.
Production Method
Hand-harvested, sorted and largely destemmed; fermentation in vats with native yeasts, malolactic in barrel; élevage 12–18 months in French oak (c.50% new). 2011 was lightly chaptalized to reach ~13.3% ABV.

Family domaine based in Vosne-Romanée; small holdings across Vosne, Nuits and Chambolle. Aux Thorey parcel bought 2006; Sébastien Cathiard assumed day-to-day winemaking around 2010–2011.
