Inky purple; blueberry, satsuma plum, black pepper, Chinese five-spice, squid ink and ferrous minerality. Medium–full, concentrated fruit with fine, mouthcoating tannins and a long, savory-spiced finish.
Food Pairing
Western: grilled lamb chops, roast beef, charcuterie, mushroom risotto. Asian: Szechuan pepper beef, Korean BBQ, hoisin roast duck, miso‑eggplant.
Production Method
Hand‑harvested and berry‑sorted; significant whole‑bunch inclusion and wild fermentation in small open fermenters; ~12–15 days on skins; pressed to fine‑grained French oak demi‑muids and aged ~11–14 months; minimal sulphites, unfined, lightly filtered.
