Tasting Note
Perfumed red-fruit core of raspberry, pomegranate and kirsch with rose petal, dried herbs, ironstone minerality and warm spice. Medium-bodied with chalky, finely honed tannins and a long, savory finish.

Roasted or herb‑crusted lamb, grilled pork, duck, charcuterie and aged cheeses; Asian pairings: Peking duck, char siu, Korean BBQ, miso-glazed aubergine, milder Sichuan or hoisin-based dishes.
Production Method
Hand-harvested bush-vine fruit; destemmed and berry-sorted; 15–20% whole-bunch, wild fermentation in small wooden and stainless fermenters; ~2 weeks on skins; matured ~11 months in large seasoned French oak; unfined, minimally filtered.
