Tasting Note
Perfumed red fruits of raspberry, dark cherry and plum with white pepper, violet and distinct ironstone minerality. Silky texture, fine chalky tannins and a long ferruginous finish.

Western: roast duck, lamb, game birds (pheasant, goose), grilled portobello mushrooms, halloumi, BBQ vegetables. Asian: Peking duck, char siu, Korean BBQ, miso-glazed eggplant, spicy Sichuan pork.
Production Method
Hand-harvested bush vines with three-pass selection; ~40% whole-bunch; spontaneous fermentation, 10 days on skins; basket-pressed to large seasoned French oak for ~11 months; minimal fining/sulphur.
