Grilled lamb, roast beef, duck confit, charcuterie, roasted root vegetables; Asian pairings: Peking duck, char siu, Korean BBQ, miso aubergine or mushroom hot pot; also pairs with grilled portobello or halloumi.
Production Method
Hand-harvested bush-vine fruit, ~20% whole clusters, wild fermentation, ~10 days on skins, basket-pressed to large seasoned French oak and matured ~11 months. Minimal sulphites; unfined/minimally filtered.
