Tasting Note

Bright straw-yellow. Aromas of acacia, hawthorn, lemon and mandarin with white peach and tropical fruit. Crisp, medium-bodied with fresh acidity, saline minerality and a clean, slightly honeyed finish.


Food Pairing

Western: grilled calamari, sea bass, shrimp/scampi, fish stew, chicken, creamy pasta, light salads. Asian: sushi and sashimi, grilled squid, Thai fish curry (mild), Vietnamese seafood, light Chinese seafood dishes.


Production Method

100% Fiano. Hand-harvested; cold, temperature-controlled fermentation in stainless steel; brief lees contact and bottle aging for 3–4 months. No oak influence.

Masseria Surani (Tommasi family estate) in Manduria, Salento. Estate spans c.80–100 ha, focused on local varieties (Primitivo, Negroamaro, Fiano); Tommasi involvement since 2014.
