Tasting Note
Deep ruby with blackberries, plums and dark cherry, plus cocoa, sweet spice and black pepper. Full-bodied, velvety tannins and concentrated fruit with a long, warming, chocolate-espresso finish.
Food Pairing
Western: grilled steak, braised beef, roasted pork, aged Pecorino, pasta al ragù. Asian: Korean BBQ, char siu, spicy Sichuan beef, teriyaki or hoisin-glazed pork, yakitori (dark-meat skewers).
Production Method
Hand-harvested Primitivo; fermentation 15–18 days (25–28°C) with cap management; matured 15–18 months in large oak casks and barriques, then ~6 months bottle ageing.
