Tasting Note
Perfumed and mineral-driven: white stone fruit, grapefruit and citrus, talc-like chalk, saline lift, faint smoky/flinty reduction and subtle oak spice. Precise acidity with a rich, Burgundian texture and long saline finish.

Whole-bunch pressing, indigenous yeast fermentation in new 500L Stockinger barrels, 11 months maturation in barrel (new Stockinger), minimal intervention, low SO2, bottled after resting.
