Tasting Note
Mineral and saline with crystalline lemon, green apple, flint and sea-spray; subtle vanilla and lees complexity, brisk effervescent acidity and a long saline finish.

Western: oysters, grilled scallops, seafood paella, ceviche, roast lemon chicken, fresh goat cheese. Asian: sashimi/sushi, miso-glazed black cod, tempura, seafood dumplings, light Thai or Vietnamese seafood dishes.

Production Method
Hand-harvested centenarian Listán Blanco; indigenous yeast fermentation in 500L oak barrels and 2,500L oak foudres; 11 months on lees, partial malolactic; minimal intervention, organically farmed.

Suertes del Marqués (founded 2006, Jonatan García Lima) works centenary ungrafted vines on volcanic soils using traditional cordón trenzado training; noted for low-intervention, organic viticulture in La Orotava.
