Tasting Note
Intense cherry/old-rose color. Pronounced aromas of ripe red fruit, blood orange, jasmine, rose, Turkish delight, wild herbs and balsamic spice. Medium-bodied, fresh acidity, spicy-savoury mid-palate and a long mineral finish.

Food Pairing
Western: grilled or baked oily fish (mackerel), paella/arroz caldoso, roasted chicken, tapas and cured meats. Asian: sushi/sashimi, grilled saba/mackerel, Thai fish curries, Korean grilled seafood, yakitori.

Production Method
Hand-harvested; whole-cluster spontaneous fermentation with indigenous yeasts in open vats (some stem inclusion); aged ~9 months in used French oak barriques (225L); bottled unfiltered.
